[ENG] Soft Matcha (Green Tea) Cookies with Matcha Chocochips Filling

In the previous blog post i wrote about how i made my matcha chocolate chips, so it's time for the cookies! The original recipe actually use white & milk chocolate for the filling but i'm gonna use matcha chocochips instead since i want them to be super matcha-ey. If you're a huge matcha fan, you gotta try this cos they turned out amazing! Well, aside from the texture issue, which i'm gonna tell you at the end of this post, the flavour is super good
But, it's really important to use a really good matcha powder for this, so try your best to find the best quality matcha powder :) I got mine from a famous matcha store in Japan (it costs about 10 USD for 30 grams, and it's only the food grade one). I also tried to make the cookies with a cheaper matcha powder from a local online shop, but they're not even nearly as good.  




Ingredients:
160 grams all purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt (optional)
2 tablespoons (about 12 grams) matcha (green tea) powder
100 grams unsalted butter
50 grams light brown sugar
1/4 teaspoon vanilla extract (optional)
1 egg (beaten)
60-70 grams matcha chocolate chips  

 
1. Prepare the ingredients. Combine flour, salt, baking powder & matcha powder in a bowl & whisk well. Put the unsalted butter in another bowl, the egg in a small bowl, let them sit to room temperature.

2. Add the light brown sugar to the butter and whisk until light & fluffy. Add vanilla extract (optional) and the beaten egg little by little and whisk well.

4. Sift the dry ingredients to the wet ingredients, mix well with a spatula. Wrap the dough with a plastic wrap and shape it into a log, cool in the fridge for at least half an hour. 

5. Preheat the oven to 170 C. Divide the dough into 20-25 equal pieces & shape them into balls. Flatten the ball & place 10-15 matcha chocochips in the center, then roll it into a ball again and flatten it out a bit by pressing the center of the ball. Repeat for all the dough balls.

6. Bake in the oven for 12-15 minutes. Place them on a wire rack to cool. 
The cookie itself is actually not that sweet, but the matcha chocochips inside really balance it out to the right level of sweetness. And the intense matcha flavour's addictive! Texture-wise, they're soft but a little bit too dense, kinda dough-like and not chewy at all, so maybe next time i make them i'll tweak the recipe a bit to get the perfect texture ;)
They're best eaten warm. Store them at room temperature in an air-tight container. You can microwave them on high for 15-20 seconds to warm the cookie, or store the shaped, unbaked cookie dough in the freezer & bake them whenever you wanna eat freshly baked warm cookies ;)
