[ENG] Sambal Matah (Balinese Spicy Shallot Relish)


Ingredients:
1/4 kg shallots
1 tsp terasi (indonesian fermented shrimp paste)
1/2 stick lemon grass
5 chili padi (or as spicy as you want it to be), thinly sliced
1 tsp sugar
coconut oil



1. Peel off the outer layer of the lemon grass, cut off the green part & the bottom part, then slice it thinly. Heat it with some coconut oil to make lemon grass infused-coconut oil. (I made quite a lot, about 3 sticks of lemon grass and keep the rest in the fridge)




2. Peel & wash the shallots (i used 1/2 kg). Thinly slice the shallots.




3. Pour hot water into the shallots to get rid of the bitterness. Leave it for 5 minutes then strain it.


4. Crumble terasi then add into the shallot slices & mix well with your hands. Add in the sugar, chili, 1 tbsp of sliced lemon grass and 2-3 tbsp of lemon grass infused coconut oil, mix well. 




You can also used less spicy chill


My mom also made ayam betutu (balinese chicken dish) to eat the sambal matah with. It's super spicy & yummy!
