[ENG] Japanese Curry Bread - Kare Pan カレーパン Madness Part 2 : The Bread


Finally, i'm making a bread! :D So, i've been wanting to try making a bread since long, but just didn't have enough confidence to do it. I've looked to many different video recipes online, but most of them use stand mixer T_T which i dont have.

so, i searched for a really basic, hand knead recipe for my first trial. and i stumbled upon this video on youtube Ochikeron - Yaki Kare Pan. pretty interesting! i love curry and the good thing about this bread is you can just fry them, so u don't need an oven!


The first experience making bread, turned out it wasn't as hard as i thought.. :) i'm not sure, but from what i read on the internet, people say that hand kneading is tiring & takes time, and looks like "everyone" use stand mixer now. 

But nope, it wasn't tiring at all! :D maybe if you make 100 bread at once then it would be tiring kkkk...



In fact it's really fun! i just love kneading it from the sticky wet batter, to the smooth & elastic dough, shaping it into balls, fill them up with the filling. so for those who haven't tried making bread, you should try once! it's just a great feeling. trust me, it's not as hard as u might think & you don't need any fancy equipment for this ;)

and some miserable looking ones.. lol




Original Recipe by Foodwishes - Homemade Hamburger Buns

Ingredients (for 12 kare pan):

438 g all purpose flour
1 cup/250 ml water

2 tsp instant yeast
1 egg
42 g butter --> melted, cooled to room temp
3 tbsp sugar
1-1 1/4 tsp salt
a little bit vegetable oil or olive oil
2 eggs & panko bread crumb for coating

Directions:

1. Combine flour & yeast, mix with a whisk until well mixed.
i mistakenly put the sugar & salt to the dry ingredients, i dont think that's matter though

2. For the wet ingredients, mix together 3/4  of the water, egg, melted butter, salt & sugar.


3. Mix the dry ingredients to the wet ingredients by hands or with a scrapper. Add water a little by little if it's too dry.

don't add all the water at once, u may need less then 1 cup depends on the humidity

4. Knead the dough until it less sticky, just pull away from the side of the bowl, transfer it to the a lightly floured surface (the counter or a big wodden chopping board). Knead again until smooth & elastic. The whole kneading process take about 10-15min.




5. Form the dough into a ball, place it in a greased bowl seam side down, lightly coat it with oil. Cover with plastic warp or a damp towel, let it rise until it doubled/tripled in size for about 1-1 1/2 hour.

6. Gently punch the dough to knock the air out of it. Transfer it to a lightly floured surface, pat it down with your hand, form it into a rectangular shape.

7. Cut the dough into 12 equal pieces, form each piece into ball. Let them rest for 10 min.

8. Flatten each ball with your hand, fill them with 1-1 1/2 tbsp of kare filling.




9. Pull & pinch the dough to seal it, flatten it a little bit, then turn it over seam side down.
be careful not to pinch the kare filling



10. Brush them lightly with beaten egg, coat with panko bread crumb. Let them rest for 15 min or until it rise 1.5 times the intial size.


11. Fry them off!


12. Eat! :D

Time to taste! :) for the bread it self, i pretty much like it, the texture is pretty soft & wasn't dry at all. but i think it's a little bit too salty, since the filling it's self is salty & spicy. maybe less salt & a little bit more sugar in the bread will give more balance to the filling. Overall, it was delicious :)
