[ENG] Salted Caramel Sauce

Ingredients:
1 cup (200 g) sugar
5 tbsp (70 g) butter, cut in slices
1/2 cup + 1 tbsp (140 ml) heavy creamsea salt to taste



1. In a medium heavy duty sauce pan (i used ceramic pan), put the sugar in and turn the heat on to medium-high. Cook, stir occasionally with a wire whisk until it turns into amber color and completely melted. Remove the whisk and continue to cook until you see a wisp of smoke. You may swirl the pan occasionally.
Depend on how dark you want your caramel to be, you may immediately turn the heat off when the sugar is completely melted, or you may cook it a bit longer until it reach the color that you want.




2. When you see a wisp of smoke, turn the heat off, let it sit for 30 seconds, then add in the butter, quickly stir until all the butter has melted. Then, pour in your heavy cream, and stir until combined. Add a pinch/ a couple pinch of sea salt (i did,  as Chef John did, 3 generous pinches), stir until the salt has completely dissolved.  
Let it cool and store in a jar, keep in the fridge.
