This is the vegetable stock i made for my Pumpkin Soup, i found the recipe on Youtube (link below this post), i didn't really follow the measurement but i think it turned out okay. So actually i also had to put some fresh herbs, but i couldn't find any in the local fresh market, so i just used dried bay leaves. Well basically i just used what i could find at the market ^^
Ingredients (for 2-3 cups stock):
1 stalk celery
1 onion
2 carrots
2 dried bay leaves
6 cup water
For the celery, i'm not sure if i should use the leaves too, so i decided to just use the stem part.
1. Wash & roughly chopped all the veggies, put them in a sauce pan along with the onion skin & dried bay leaves.
2. Pour in the water, turn the heat on and let it comes to a boil. Then turn the heat down to low & let it simmer for 1-3 hours (i simmered it for 3 hours). Strain the stock & it's done! You can store it in a jar or zip loc bag, throw them in the freezer.
