[ENG] Prawn Aglio Olio e Peperoncino with Italian Herbs




Aglio e Olio! Recently my mom made this a lot and i love it! It's not the classic aglio e olio since she add italian herb seasoning & shrimps, but it's even greater! I already love the classic aglio e olio but when you add shrimps, it just takes it to another level ;) We also use the italian herb seasoning instead of fresh parsley, and i actually like the italian herbs a little bit better .

And even though she use frozen peeled shrimps, it still works really well! Make sure though you use good quality one if you wanna use  frozen shrimps too. My mom also tried to make it with tuna flakes instead of shrimps, but i like it far better with shrimps. Btw i don't really know the different between prawn and shrimp, i just use "prawn" on the tittle because it sounds cooler lol


I'll give you the recipe for 2 servings, but actually i made it for about 3-4 servings so you may notice that the amount of pasta, etc in the pictures are too much for 2 servings ^^





Ingredients (for 2 servings):
2 servings of spaghetti/any other pasta
10 cloves of garlic (or more)
shrimp (frozen of fresh)
olive oil
salt to taste
2 chilli padi (or more)/red pepper flakes 
italian herb seasoning/fresh italian parsley


1. In a pan, put the frozen shrimp, add water and salt. Turn the heat to medium-high, and cook it until it comes to a boil, then turn off the heat. Set it aside while you prepare other ingredients.
If you're using fresh shrimp, season it with salt and leave it for at least 30 minutes. Then, in a pan, put some olive oil and turn the heat to high. Sear the shrimp on both side until golden brown, then set it aside. (it doesn't have to be fully cooked on the inside)



2. Salt generously the water to cook the pasta (about 1 tbsp of salt), when the water's boiling, put the pasta in and cook according to direction on the label. Drain the pasta & toss some olive oil to prevent it from sticking.



3. Peel the garlics and slice them thinly. Cut the cooked shrimps into bite-size pieces (you can leave them whole if you want, but i think it's better to cut them into little pieces to absorb more of the garlic flavour). (Optional) If you want it spicy, slice the chillis thinly, use red chilly flakes if you want it not as spicy.




4. Put some olive oil and the garlic into a saute pan, turn the heat to medium and stir the garlic into the oil. When it start to bubble, turn the heat down to medium-low and slowly toast the garlic until it get a bit golden brown. (see the video on how to do this correctly in the reference below)




If you're using chillis, add them half way through before the garlic turn golden brown.


5. When the garlic has turned to light golden, add in the shrimp, season with salt (about 1/2 - 1 tsp),  saute for 1 minute. The add the pasta & mix it well. Turn off the heat, sprinkle the italian seasoning/fresh parsley and red pepper flakes (if you're not using chillis), mix well, check again for seasoning, if it need more salt, and if you're happy with the taste, serve :)
